048: quinoa cake

OK. I know. Quinoa cake? What? But seriously, I made this cake, which has quinoa but no flour, and it is GOOD. Like, seriously tasty. I mean, it’s got all the other stuff that a cake would have – sugar, cocoa, eggs, etc. – so of course. But…quinoa! So weird.

Anyway, happy almost-birthday to me. (It’s Friday.) Someone’s gotta make me a cake and the only someone that will is…me.

  1. Quinoa cake has been a staple in my diet for a few years. So good. I like this recipe b/c the cake itself has less sugar. The icing looks amazing!

  2. So … what does the quinoa do for the cake? Can you tell it’s in there?

  3. It’s…like…the flour? I do not have a great blender so there were still some whole quinoa grains in it, which I only noticed if they were right on the edge and got a little crispy. Otherwise, nope! I’d never have known.
